Zoodles > Noodles

I feel like I should have sent an 'Out of Office' post to all of you! It's been TOO long. I've missed you all, and have LOTS of exciting things coming you way! But it's time to get back in the saddle! BTW - I hope you missed me and I promise to make it up to you all.

So in lieu of my return, I've got a yummy dish you can whip up in under 30 minutes tonight! I love zoodles - they make a great alternative to any pasta dish. #CarbFriendly #IsButterACarb

I'm also a huge fan and have a slight #GirlCrush on Ali of the brand & blog, Inspiralized. Check her our ASAP! She makes everything in noodle form - from delectable breakfast dishes to savory sides - and leaves no vegetable left behind. Before I followed her, I picked up my Veggetti at BB&B (love their 20% coupons)! Excuse the ramble, but I just adore her. Now while majority of the spiralized dishes I make come from her blog or snapchat, this one comes from my go-to-when-in-a-bind Pinterest board. Follow me here!

Skinny Shrimp Scampi with Zucchini Noodles


 2 Tablespoons olive oil
1 pound jumbo shrimp, shelled and deveined 
1 Tablespoon minced garlic 
1/4 teaspoon crushed red pepper flakes (optional) 
1/4 cup white wine 
2 Tablespoons freshly squeezed lemon juice 
2 medium zucchini, cut into noodles
Chopped parsley, for garnish
